Vegetarian Chilli Con Carne
Ingredients
- 500 g Soya Mince
- 1 large Onion chopped
- 1 Tin Chopped tomatoes
- 1 can Kidney beans
- Olive oil
- 1 sachet of chilli Con carne mix
- Approx 150ml water
- 1 large mug dried rice
- Creme Fraiche or Sour Cream
Optional
- 1 can baked beans use instead of Kidney beans
Instructions
- Put the rice on to cook
- Chop the onion and gently fry in a little oil
- Add the Soya mince and stir in until soft (you may need to add a little water to keep moist)
- Add the Chilli mix (according to the packet instructions) and stir in
- Add the tomatoes and beans and stir in
- Bring to the boil then turn the heat down to a simmer. Continue to cook for about 10mins, stiring occasionally.
- Serve with the rice
- Add a dollop of Creme Fraiche or Sour Cream
Notes
For extra tasty rice, add a little butter and stir in before serving.
Serve with Nacho chips & dips
