Vegetarian Chilli Con Carne

  • 500 g Soya Mince
  • 1 large Onion chopped
  • 1 Tin Chopped tomatoes
  • 1 can Kidney beans
  • Olive oil
  • 1 sachet of chilli Con carne mix
  • Approx 150ml water
  • 1 large mug dried rice
  • Creme Fraiche or Sour Cream


  • 1 can baked beans use instead of Kidney beans


  • Put the rice on to cook
  • Chop the onion and gently fry in a little oil
  • Add the Soya mince and stir in until soft (you may need to add a little water to keep moist)
  • Add the Chilli mix (according to the packet instructions) and stir in
  • Add the tomatoes and beans and stir in
  • Bring to the boil then turn the heat down to a simmer. Continue to cook for about 10mins, stiring occasionally.
  • Serve with the rice
  • Add a dollop of Creme Fraiche or Sour Cream


For extra tasty rice, add a little butter and stir in before serving.
Serve with Nacho chips & dips
