
Slow Roast Pork with Apple Sauce
Ingredients
- 2 kg Pork shoulder is better but any cut will do
- Salt & Pepper
- Olive oil
- Salt & Pepper
- 2 Red Onions
- 4 medium Carrots
- 2 Garlic Gloves
- Sprig of thyme optional
- 2 Large apples
- Squeeze of lemon
- A little water
Instructions
- Preheat the oven to gas mark 7 / 220º
- Place the pork in a roasting tin. Score the top with a sharp knife. Rub in the oil, salt & pepper.
- Crush the Garlic gloves and rub over the top and then place in the tin along with the carrots, onions & thyme.
- Place in the oven uncovered for about half an hour.
- Turn the oven down to Gas mark 3/ 140°. Cover the pork with tin foil and continue to roast for about 4 – 4½hrs.
For the apple Sauce
- Peel & slice the apples
- Place in a saucepan with a squeeze of lemon and a little water.
- Bring to the boil then turn down to a simmer and cook until soft.
- Mash the apples until soft.
- Place into a dish and set aside.
Notes
Serve with Roast Potatoes and vegetables.
Buy a joint that is large enough to leave some left over for the next days meal and or sandwiches
