All the recipes have been tried and tested on my family and friends and have been tweaked and adapted to suit a busy working lifestyle. Some of the recipes will have suggestions for alternative ingredients, so if you don’t like something you can swap it out for something else.

It is so easy to grab a take-away or microwave a ready meal, because that is what convenience food is for. I’m not saying you shouldn’t have them, they have their place, but not on a daily basis. We all want to do the best for our family by giving them tasty healthy meals but think it will be too time consuming to do. No. it’s not. It just comes down to planning and confidence.

Jacqui founded Confident Cooking because she wanted to pass on her experiences as a busy working mum and show you how cooking healthy tasty homecooked meals is easy to do with the right planning and knowledge.
